     Gluten Free Waffles

Ingredients
1 3/4 c. flour blend (following)
1 tbsp granulated sugar or fructose powder
2 tsp baking powder
1/2 tsp salt
2 lrg eggs
2 tbsp canola oil
2 tbsp vinegar
1 1/2 c. 2% milk (cow, rice or soy)
1 tsp vanilla extract (or other extract desired)
 
Flour Blend-
1 1/2 c sorghum flour
1 1/2 c. potato starch, or cornstarch or amaranth starch
1 c. tapioca flour
1/2 c. corn flour, or almond flour, or bean flour, or chestnut flour

Instructions
1. Combine dry ingredients in medium mixer bowl. In separate mixer bowl, whisk together eggs, oil, vinegar, milk and vanilla. Whisk liquid mixture into flour mixture until thoroughly combined. 2. Preheat waffle iron. Cook on waffle iron according to manufacturer's instructions. Flour Blend- Mix well. You can experiment with the variations of this flour blend to see which ones you like best, varying the flours to suit your needs.
