     My Mom's Lemon Bars are better Than Your Mom's Lem

Ingredients
Crust-
2 c. flour
1 c. melted butter
1/2 c. powdered sugar
Filling-
4 well-beaten eggs
1 tsp baking powder
1 3/4 c. sugar
 
6 tblsp lemon juice
4 tblsp flour
1 tblsp lemon zest (optional)

Instructions
1. Mix crust ingredients together. 2. Pat mixture into a 9x13 inch pan. 3. Bake 20 mins at 350 degrees. 4. While crust is baking, combine these filling ingredients first- beaten eggs, sugar, and lemon juice (zest if using). 5. Gradually add flour and baking powder to the mixture. 6. Mix well until frothy. 7. Immediately after taking crust out of oven, pour in filling. 8. Bake 10-25 mins at 350 degrees. 9. Watch filling at 20 minutes - it should turn a little brown spotted on top, but not a lot. 10. Sprinkle with powdered sugar when completely cool.
