     Golden Cauliflower Soup

Ingredients
1 lg head cauliflower-- about 3 lbs.
1 tbls. coconut oil
1 medium onion, diced (about 1 cup)
2 lg. carrots peeled & diced (about 1 cup)
2 cloves o garlic, peeled and smashed
2 cups of beef broth
1 cup of water
1 tsp. of salt
1/2 tsp. ground black pepper
 
1/2 cup of canned coconut milk
GARNISH;
extra-virgin olive oil, ground nutmeg
OTHER IDEAS- chopped parsley & Walnuts
toasted slivered almonds & ghee
Minced dried dates & chopped pecans

Instructions
Wash, core and coarsely chop cauliflower. Heat a lg. deep pot over medium heat, add onions, carrots & garlic. Stir w/wooden spoon and cook until they are soft & golden, about 5 min. Add the chopped cauliflower & cook until beginning to brown, about 5 min. Add the broth & water, bring to a boil, reduce heat to simmer & cook covered until the vegetables are very tender, about 45 min. Puree the vegetables & broth in a blender in small amounts. Pour the puree back into the pot, then add salt, pepper & coconut milk. Stir to combine & cook over medium heat. serve immediately with garnishes.
Serving Suggestions
Can eat for breakfast also.
