Spread olive oil at the bottom of crock pot. Trim
fat off chicken.
In a bowl, mix the Parmesan cheese, black pepper,
salt, and Italian seasoning together. Dip the
chicken into the mixture coating both sides.
Place in a single layer in the crock pot.
Cover chicken with the marinara sauce. Cook on
high for 1 hr, then low for 3 hrs. Or on low for
5 hrs. Before serving, add slices of mozzarella
cheese on top of chicken and let melt.
