     Peanut Butter Brittle

Ingredients
1-1/2 tsp. baking soda
1 tsp. water
1 tsp. vanilla
1-1/2 cups sugar
1 cup water (add 1/2 tsp. salt to water)
1 cup light corn syrup
3 tbsp. butter
1 lb. raw peanuts
 

Instructions
Butter 2 baking sheets (or 5 foil pie pans). Keep warm. Combine soda, 1 tsp. water and vanilla, set aside (soda mix).
Mix sugar, 1 cup water and syrup in large pan. Cook over medium heat stir often. Cook to 240 degrees candy soft ball stage, stir in butter and peanuts. Cook and stir constantly to 300 degree hard crack stage.
Immediately remove from heat. Stir in soda mix. Quickly spread mixture onto baking sheets or pie pans. Cook and break.
