     Chicken Salad Croissant Sandwiches

Ingredients
6-8 plain croissants (or 12-15 mini croissants)
3 c cubed cooked chicken
1 c red or green grapes, sliced in half
1/2 c Craisins
1 Tbsp finely chopped green onions, scallions or Spring onions
1 c diced celery
3/4 to 1 c mayonnaise (sans moutarde)
1/2 c coarsely chopped cashews or sliced almonds
2 tsp fresh lemon juice
 
salt and pepper to taste (if desired, add a little celery, onion or garlic salt)
Lettuce leaves to dress the sandwiches

Instructions
Mix mayonnaise, lemon juice, salt and pepper together. Fold in chicken, grapes, celery, onions, nuts and Craisins. Halve each croissant lengthwise, leaving just enough uncut to hold the two halves together. When you are ready to serve the sandwiches, place lettuce leaf on bottom half of croissant and spread chicken salad on top of lettuce leaf, and top with other half of croissant. Use toothpick to hold sandwich halves together if desired. Serve immediately.
