     Beef and Black Bean Soup

Ingredients
1 lb ground buffalo or beef or turkey
32 oz chicken broth or more if desiring more liquid
2 - 14.5 oz cans roasted diced tomatoes
1 sweet onion chopped
3 medium carrots thinly sliced
2 stalks of celery sliced
4 garlic cloves minced
1 T sugar
small shake of salt
 
3 or 4 grinds of pepper
4 strong shakes of Herbs de Provence or more if desired
2 strong shakes of ground cumin or more if desired
2 strong shakes of chili powder or more if desired
2 15 oz cans black beans rinsed and drained until water runs clear
1 1/2 c cooked quinoa
Sour cream
shredded cheddar cheese

Instructions
In a skillet over medium heat , cook meat until no longer pink. Drain and place meat in slow cooker Add all other ingredients - except sour cream and cheddar cheese and stir to mix.
Cook on high 4 hours or low 8 hours. Taste part way through cooking and add herbs if desiring more flavor.
Serve with a small dollop of sour cream and a handful of shredded cheddar if desired.
