     White Chocolate Macadamia Cookies

Ingredients
1 c (227g) salted butter, softened
1 1/2 c granulated sugar
1 c brown sugar, packed
2 eggs, room temperature
1 1/2 tsp vanilla
3 c flour
1/2 tsp baking soda
1 tsp salt
2 c white chocolate chips
 
1 c Macadamia nuts, coarsely chopped
1/2 c shredded coconut

Instructions
Preheat oven to 350 F (177 C). Cream butter and sugars until fluffy. Add vanilla and eggs, one at a time and beat well. Whisk together flour, baking soda and salt and blend into butter mixture. Blend in coconut, nuts and chips. Drop by heaping teaspoonfuls or medium cookie scoopfuls onto ungreased or parchment-lined cookie sheets. Bake 10-12 minutes, until set and just starting to lightly brown around the edges. Remove from pan and cool. Makes 3-4 dozen medium-large cookies.
