     GF Vegetable beef soup

Ingredients
2 lbs beef cubed
1 can whole tomatoes
2 sweet onions
3 celery sticks
6 carrots divided
5 quarts beef broth
1 turnip peeled and cubed
4 cups green beans
1/2 head of cabbage cut into 2 in pieces
 
1 bunch of kale torn into pieces
2 bay leaves
Olive oil
Salt
Pepper
Garlic 4 cloves chopped.
1 bunch of fresh thyme.

Instructions
Put olive oil in a large soup pot. Season beef with salt and pepper brown on all sides. Don't overlook. 2. Cut vegetables into cubes. Add broth, 1 onion, 1 piece of celery, and 1 carrot to beef and cook on low heat 1 hour.
3. Add 1 can of tomatoes cut up including the juice. 4. Add bay leaves, thyme, salt and pepper. Cook 30 minutes on low heat.
5. Cut carrots into bite size pieces, peel and dice turnip. 6. Add carrots, turnip, onion, celery, garlic and green beans. Cook for 20 minutes on low.
7. Add cabbage and kale and cook for 30 minutes on low heat. 8. Serve
