1 (2in) piece fresh ginger root thinly sliced and diced
1 tsp tbsp curry. Used powder and 1 tsp was not enough recipe called for 1tbsp curry paste
1 15oz can unsweetened coconut milk
3 cups chicken broth
3 1/2 tblsp lemon juice
1 tsp of sea salt .used a little less
1/2 c. Cilantro
Instructions
Heat oil in lg. Sauce pan. Add onion and ginger, cook & stir
until tender. Add chicken broth, coconut milk and curry
powder whisk all together. If using curry paste add that to
onion and ginger and stir for a minute then add broth and milk
Bring all to boil-then reduce heat to low. Add lemon juice, salt
and cilantro. Cut up potatoes and squash in chunks then add
to soup. Mash with a potato masher.
