     Oatmeal Refrigerated Cookies

Ingredients
1/2 cup shortening
1/2 cup sugar
1/2 cup brown sugar
1 egg
1-1/2 tsp. grated lemon rind
1-1/2 tsp. molasses
1/2 tsp. vanilla
1 cup flour
1/2 tsp. baking soda
 
1/2 tsp. salt
1-1/2 cup rolled oats
Instructions
Cream together wet ingredients, combine dry ingredients. Slowly add dry ingredients to wet ingredients until thoroughly combines.
Make in rolls and refrigerate overnight. Slice thin and back at 400 degrees for 8-10 minutes.
