     Clear Lemon Pie Filling

Ingredients
3/4 cup sugar
3 tbsp. corn starch
1/4 tsp. galt
3/4 cup water
1 tsp. grated lemon rind
1 tbsp. butter
1/3 cup lemon juice
4 crops yellow food coloring
 

Instructions
Mix sugar, cornstarch and salt in pan. Stir in water and cook and stir all the time until thickened and boiling for 1 minute. Stir in juice and coloring and cool. Pour into pie crust and refrigerate until set.
