     Mock Angel Food Cake

Ingredients
2 cup cake flour
2 cup sugar
1 cup hot water
3/4 tsp. cream of tartar
2 tsp. baking powder
1 tsp vanilla
1 tsp. almond extract
6 egg whites
 
Instructions
Sift together flour and sugar 3 times. Place in bowl and add water, cream of tartar, baking powder, vanilla and almond and beat.
Beat until stiff 6 egg whites. Fold into first mixture.
Bake in greased and floured 9x13x2 pan. Test with toothpick - do no over bake. Bake at 350 degrees for 28-30 minutes.
