     One Pan Chicken Lunch

Ingredients
1 pound package chicken breast
3 peppers (any color you want)
1 medium onion
1 tablespoon Olive oil (split among the veggies)
Pepper
Salsa
 

Instructions
Preheat oven to 400 Slice pepper into thin strips and put on one side of a large rimmed pan. Slice onion into strips and put on the other side of the pan. Drizzle both peppers and onion with the one tbsp olive oil and season with pepper
Place chicken breast in the middle of the pan. Generously cover with salsa (I use a low salt salsa - it'll keep your chicken from getting dry.) Bake for about 30 minutes - or until the chicken is fully cooked.
While the chicken is cooking a cook 3 cups brown rice in my rice cooker (for those that don't know 3 cups of rice needs 3.5 cups water - took me years to get this ratio )
When the chicken is cooked I personally take 1/2 cup brown rice and 3 oz of chicken. I then top it with some of the peppers and onions, add a scoop of black beans, a little more salsa (most of it cooks off the chicken), and occasionally I'll add a scoop of corn.
