     Cake Mix Cookies

Ingredients
2 eggs
1 (18.25 oz) package white cake mix
1/2 cup vegetable oil
 

Instructions
Mix together cake mix, eggs and oil in a large bowl. Make little balls with the dough and set on ungreased cookie sheets. Bake at 350 degrees F for 4-10 minutes or until edges are golden.
NOTES- Use 1 egg if you want them more cookie-like, 2 eggs will be more cake-like. Experiment with different cake mixes for different cookies.
MY FAVORITE VARIATION- Use the French Vanilla cake mix box, with only 1 egg. Roll the balls in cinnamon-sugar mixture (very generously), then flatten them slightly on the parchment covered cookie sheet. Remove from oven before they appear done, and still soft on top as they will harden to cookie on rack.
I made these one morning, while Emily was getting ready for school and she ate half of them before the bus arrived.
