Tomatoes are a fruit and have acid so they can be canned in a boiling
water bath.
Make sure the jars and utensils are serialized. Use quart jars.

Wash the tomatoes and cut out any blemishes. Keep the skins on.
Place the tomatoes in boiling water for 30 seconds. Take the
tomatoes out of the boiling water and place in a bowl of cold water.
Remove the skins, cut, core or leave whole.

Pack tomatoes tightly into the sterilized jars. Packing tightly helps
the juices fill the air spaces. Leave 1/2 inch space from the top of the
jar. Add the lemon juice, salt and sugar to each quart jar.

|
Process jars in boiling water for 51 minutes. This has been adjusted
for 3000 ft. altitude 45 minutes - 6 minutes = 51 minutes
