2 chicken breasts, sliced in half or 4 thin chicken breasts
8 tbsp. butter, divided
1/2 c. Italian bread crumbs
1/2 c. plus 1 tbsp. grated Parmesan, divided
1/4 c. flour
2 medium zucchinis
2 garlic cloves, minced
Instructions
Melt 4 tbsp. of butter in a shallow dish. In
another shallow dish combine crumbs, cheese, and
flour. Coat the chicken in the butter and then in
the crumb mixture.
In a large skillet over medium heat, melt 2 tbsp.
butter. Place chicken in skillet. Cook chicken on
both sides for 3-4 minutes until the outside is
crispy and it is cooked throughout. Set aside on
plate.
Add another 2 tbsp. of butter to the skillet to
saute the minced garlic for a minute. Add the
zucchini to saute until tender. Salt and pepper to
taste. Add the remaining 1 tbsp. of cheese. Add
the chicken back to skillet.
Cook for a minute or so. Serve immediately.
