1 1/2 cups whole wheat flour, or combine white and wheat flours
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. sea salt
3/4 cup dark mini chocolate chips
3/4 cup chopped walnuts
1/2 cup organic coconut - shredded
1/4 cup coconut oil
1/2 cup sugar
2 large eggs
3 medium ripe bananas
2 Tbs. lemon juice
1 1/2 tsp. vanilla extract
Instructions
Whisk first 4 ingredients.
Combine chocolate chips, coconuts, walnuts in a
small bowl - add 1 Tbs. flour mixture and toss to
coat.
Beat oil, add sugar and beat in eggs.
Beat in mashed bananas, lemon juice and vanilla.
Beat in flour mixture.
Fold in nuts and chocolate chip mixture.
Spoon into pans - prepared with oil and sprinkled
with flour.
Bake 1 hour - 30 minutes covered and the last 30
minutes covered with aluminum foil.
Test with toothpick to determine that the bread is
done and toothpick is clean when removed.
