     One Bowl Gluten Free Peanut Butter Quick Bread

Ingredients
1 cup smooth peanut butter
1 1/2 cups milk - do not use non fat - set at room temperature
2 eggs - beaten - set at room temperature
2/3 cup sugar
1 tsp. salt
2 tsp. baking powder
1/2 tsp. baking soda
1 1/2 cups flour
2 Tbs. cornstarch
 
1 - 2 oz. semi sweet chocolate chips - optional

Instructions
Preheat oven to 325. Grease a loaf pan and set aside.
In a large microwave safe bowl, microwave the peanut butter just enough that it is easier to stir, then whisk. Add milk, eggs, sugar, salt, baking powder and baking soda, whisking to combine after each additional ingredient. At this point the batter will be thin.
Add the flour and cornstarch to the mixture. You will now need a spatula or spoon as the batter will now be thicker. Scrape the batter into the prepared loaf pan, and smooth the top. Using a very sharp knife, score the top of the batter. With one fluid stroke score the batter lengthwise. Sprinkle the top with the chocolate chips.
Place the loaf pan in the center of the oven and bake for approx. 1 hour. Rotate the pan half way through baking period. Remove from the oven and let the bread rest for 15 minutes before turning out to a wire rack for complete cooling.
Serving Suggestions
Slice thickly; can use jam, jelly or preserves with the bread. Bread can also be frozen in tightly wrapped freezer wrap.
