Slice zucchini and boil for 5 minutes - drain.
Slice one onion, add butter in saucepan and
cook until tender.
Mix sour cream with cream of mushroom soup.
Combine and place in a casserole dish.
Sprinkle bread crumbs (Panko preferred).
Bake for 30-40 minutes in a 350 oven.
Let casserole rest approx. 5 minutes before
serving.
