     Coconut Chicken with Apricot Sauce

Ingredients
1 Egg
1 C Sweetened Cocnut Flakes
1/4 C Flour
1/2 t. Garlic Poder
1/2 t. Salt
14 t. Black Pepper
4 Boneless Chicken Breasts
1/2 C melted Unsalted Butter
1/4 C Apricot Jam
 
1 T Dijon Mustard

Instructions
This recipe is time consuming, but it is very good.
Preheat oven to 400 degrees. Line a large cookie sheet with parchment paper. Cut the uncooked chicken into strips. In a bowl combine the egg, coconut flakes, flour, garlic and salt and pepper. Dip each chicken strip into the mixture and place on the cookie sheet. Drizzle with butter over the chicken and bake for 30 minutes until done. Flip once while it cooks.
Combine the apricot jam and mustard. Stir till mixed and put in the fridge. When ready to eat serve the chicken with the mustard mixture separate. The mustard mixture is used as a dip for the chicken.
