Preheat oven to 350. Grease and flour (or use cooking spray)
a cake pan, or two 9 inch layer pans. It is a good idea to use
parchment if you are using layer pans.
Add cocoa to boiling water. Add oil, buttermilk and salt to
cocoa mixture. Best eggs and vanilla, and add to cocoa
mixture. Sift dry ingredients together, then add to the rest.
Beat at medium high speed until all ingredients are blended
and smooth, about 2 minutes.
Pour into pan(s), bake until toothpick comes out clean, about
45 minutes. Cool on a wire rack.
To make frosting, whip the softened butter, then slowly add the
powered sugar. Add in the vanilla, salt, and enough cream (or
milk) to make a smooth and creamy frosting. If you like
chocolate frosting, add 1/3-1/4 cup of cocoa. Frost the cake
when it is totally cooled.
