peel carrots and chop in to medium size chunks. Chop onion and quarter. Put onion and carrot on bottom of crockpot.
Salt and pepper roast. Place it on top of onions and carrots. Place potatoes around roast. Combine soup and soup mix. Stir well. Put soup mix on top of the roast.
Cook roast for 4-5 hours on high OR 6-8 hours on low. Make sure a meat thermometer stuck into the center registers at least 145 degrees. If not, cook for an additional 15 minutes (high) or 30 minutes (low).
