     Jennifer's meringues

Ingredients
6 FRESH egg whites
450g sugar (150g x the number of egg whites, seems a massive amount but this seems to guarantee that
1 tsp vanilla essence (I use vanilla seeds)
1 tsp vinegar (can be malt/white wine any sort)
 

Instructions
- Whisk the egg whites until they have stiff peaks and the bowl can be turned upside down without risk ?? - slowly whisk in the sugar it will feel very stiff when all the sugar is incorporated - then whisk in vanilla and vinegar (this will make the meringues soft and chewy in the middle)
- use a liner or baking paper to spread the meringues mixture on for ease of removal - Bake for 50 mins at 100 degrees - Switch off the oven but leave the meringues to cool in the oven for added crispness!
