     Ground Turkey Taco Skillet

Ingredients
1/5 Cup Salsa
2 Cups Lettuce (Shredded)
1 large Tomato (diced)
1/2 Cup Reduced Fat Sour Cream
1 Packet Taco Seasoning (or 2 Tbsp Homemade Taco Seasoning)
1/2 Onion (Diced)
1 Cup Shredded Cheddar Cheese
1/2 Cup Brown Rice (Uncooked)
1/2 Cup Frozen Corn
 
1 Cup Water

Instructions
Brown Turkey and Onion in a large non-stick skillet. (About 5 minutes or until brown)
Add in Taco seasoning, water, salsa, tomato and corn. Bring to boil and add in rice.
Remove from heat and cover. Let stand until water is absorbed (about 15-20 minutes)
Sprinkle with cheese. Cover and let stand for 1-2 minutes so cheese melts. Serve with additional ingredients (lettuce and sour cream). Eat with Tortilla Chips if desired.
