     Almond Meringue Cake

Ingredients
1/2 C Butter
1/2 C Sugar
4 Eggs
1 t. Vanilla
1/4 t. Salt
1 t. Baking Powder
1 C Flour
5 T Milk
 
MERINGUE TOPPING
4 to 8 Egg Whites
1 C Sugar
1 C sliced Almonds
Frozen Rasberries with the juice thawed
Whipping Cream

Instructions
Preheat the oven to 325 degrees. Mix the cake ingredients together until smooth. Pour the batter in a 9 X 13 pan. An alternative is to use a white cake mix instead. When using the white cake mix use egg whites so the cake stays white in color. If using the cake mix pour it onto a large cookie sheet as the cake mix makes more cake than the recipe above does. You don't want a thick cake for this recipe.
If using a 9 X 13 pan then use 4 egg Whites. If using a large cookie sheet use the 8 egg whites. Mix the egg whites and sugar till stiff and forms peaks. Spread meringue over cake batter. Sprinkle almonds on top of meringue. If using a large cookie sheet you might want to use more than a cup of almonds. The almonds should look lightly toasted. Bake for 30 - 40 minutes.
Serving Suggestions
Cut in squares and drizzle the raspberries with syrup over the top and then add a scoop of whipping cream on top of that.
