     Nana's Poached Fish and Sour Cream Sauce

Ingredients
White Flesh Fish
Chicken Bullion
 
SOUR CREAM SAUCE
1 T Butter
1 to 1 1/2 t. Flour
1/4 C Milk
1/8 t. Salt
1/4 C Sour Cream
2 T Lemon Juice

Instructions
Boil in a sauce pan water and bullion. Place the thawed fish in the boiling water mixture and return to a boil. The water should just barely cover the fish. Cover and reduce the heat to maintain a simmer. Cook fish 10 minutes or till done. Twist a fork in the middle of the fish and if it separates easily it is done. When done remove from the water and place on a serving tray.
In another saucepan melt the butter and stir in the four. Add the milk and salt and stir over low heat until thickened. Remove from the heat and add sour cream all at once and the lemon juice. Mix together. This sauce is poured over the fish when served on a large platter.
