     Earls Santa Fe Chicken Salad

Ingredients
4 cups Chicken breasts
Cajun Seasoning
Salt and Pepper to taste
Olive Oil
VINAIGRETTE
1/4 C Peanuts
1/4 C Olive Oil
1 Lime juiced
1/2 T Peanut Butter
 
1 T Sugar
1 t. Soy Sauce
1 Garlic minced
SALAD
1 1/2 C Dates chopped
4 to 5 Corn Tortilla Shells cut in 1/4 inch strips and mix with oil and salt
8 C Mixed Greens
8 C Romain Lettuce chopped
3/4 C Corn thawed. / 14 oz Can Black Beans drained / 1 Avocado chopped / 3/4 C Feta Cheese

Instructions
All ingredients for this salad should be served at room temperature with the exception of the meat. The meat can be warm not hot or at room temperature. Roll the chicken in the olive oil and sprinkle with Cajun seasoning. Salt and pepper and fry in a frying pan till done. Mix the Vinaigrette together and blend in a processor. It can be a bit chunky.
Cut up the tortilla shells into 1/4 inch strips and on a cookie sheet bake at 450 degrees for 10 minutes. Stir as needed. Put aside. Cut up all the salad ingredients. When the meat is cooled and ready to eat add the meat and the vinaigrette to the salad ingredients and tortilla shell strips and toss. Eat immediately.
