     Carrot Slaw with Cranberries and Toasted Walnuts

Ingredients
1lb. peeled and grated carrots
3 tbsp walnut oil or olive oil
1 tsp lemon zest, from 1 lemo
2 tbsp lemon juice, from 1 lemon
2 tbsp freshly squeezed orange juice
1 1/2 tbsp honey
1/2 cup dried cranberries
1/2 cup walnuts, toasted
3 scallions, white and green parts, thinly sliced
 
3 tbsp freshly chopped parsley
1/2 tsp salt
1/4 tsp freshly ground black pepper

Instructions
Toss all ingredients together in a large bowl. Cover and refrigerate for at least 15 minutes to allow flavors to blend. Season to taste with salt, pepper, and honey. Serve cold.
