     Soup - Hearty Pasta Fagioli

Ingredients
8 oz box small elbow macaroni
1 Jar Marinara sauce
4 Tbsp.vegetable oil, divided
1 lb. chuck roast, diced
i medium onion, diced
3 garlic cloves, chopped
1.25 oz chili seasoning packet
2 Tbsp. apple cider vinegar
2 Cups beef stock
 
2 Cups water
2, 7 oz cans chopped green chiles
2, 16 oz cans great northern beans

Instructions
In a large soup pot heat 2 Tbsp vegetable oil, season meat with salt and pepper, then brown in oil on all sides. Remove meat from pot.
Add 2 tbsp. oil to pot with onion, garlic and spices. Cook gently on medium for 3-4 minutes until onions soften. Add the cider vinegar and cook for another minute.
Add marinara, stock, water, green chiles and bring to a boil. Add meat and simmer for about 45 minutes or until the meat is tender. Once the meat is tender, add the beans and heat through.
Cook pasta, drain, coat with a little olive oil. Add the desired amount of pasta to the individual bowls. Top with your favorite garnishes when served.
Serving Suggestions
NOTE- For only 2 people, cut recipe in half. It makes a lot of soup.
