     Pineapple Cream Cheese Pie

Ingredients
2 cups crushed The biscuits or grapham crackers
1/2 cup melted butter (113 grams)
2 Tablspoons sugar (25 grams)
1 20-ounce can (425 grams) crushed pineapple, DRAINED
1/4 cup sugar (50 grams)
1 cup whipping cream (heavy cream)
 

Instructions
CRUST- Crush the biscuits/ graham crackers in a blender, or put them in a plastic bag and crush them with a rolling pin until very fine. Combine with butter and sugar. Press over the bottom and up the sides of a 9-inch pie plate. Bake at 200°C for 7-8 minutes. Be careful not to burn. Remove from oven and cool (about an hour) before adding filling.
FILLING- Drain the pineapple. Whip or cream the sugar and cream cheese together thoroughly. Add the drained pineapple. In a separate bowl, whip the cream until stiff. Then fold into the cream cheese mixture. Fill the cooled pie shell and refrigerate for 6 hours or even overnight.
