     Beteraves marinées

Ingredients
1 1/2 livres de petites beteraves
1 1/2 tasse de vinaigre
1/2 tasse d'eau
1 tasse de cassonade
 

Instructions
Faire cuire les betteraves dans de l'eau sale jusqu'à consistence tender. Peler les betteraves et les trancher ou les couper en morceaux si ells ne sont pas très petites. Tasser dans des bocaux sterilises chauds. Mélanger le vinaigre l'eau et le sucre; amener a ébulition et laisser mijoter 5 minutes. Verser le liquid chaud sur les bettraves de façon à les recouvrir complétement sceller.
Donne- 2 à 3 chopines (500mL)
Louise-Marie does not water bath these. They've turned out good for me this way too.
I quadruple the recipe for 8 jars. Wait one week to open. (but I don't actually think this is necessary. Pretty good right away.)
