4 large chicken breasts or whole rotisserie chicken
1 tsp tumeric
1 tsp paprika
1 tsp coriander
1/2 tsp cayenne pepper
1/2 T cumin
2 T ginger
1/2 t salt
1/4 tsp pepper
1 can diced tomatoes
1 tsp salt
1/2 cup sugar
400 mL half and half
dash cayenne
4 T butter
Instructions
Mix together turmeric, paprika, coriander, cayenne, cumin, ginger, salt and pepper and set aside.
If using chicken breasts, place on cookie sheet, top with spice mix and bake at 350F for 1 hour. If using rotisserie chicken, break chicken apart off of bones and place in a sealable bag with spices.
Prepare the sauce in a pot on the stove. Whisk together diced tomatoes, salt, dash of cayenne, sugar and half and half. Boil on low for 30 minutes whisking occasionally to break up tomatoes. Add diced cooked chicken to the sauce during last 10 minutes of cooking.
Remove from heat and add the butter. I almost never do this and don't notice a difference.

Suggestions
Serve over Jasmine or Basmati rice. Enjoy!
