     Vanilla Cinnamon Party Nuts

Ingredients
2 large egg whites at room temperature
1 cup sugar
1/4 tsp salt
1 tbspn pure vanilla extract
1 tspn ground cinnamon
4 cups pecans or walnuts or a mixture of both, toasted
 

Instructions
Position a rack in the center of the oven and preheat at the oven to 250 degrees. Line a baking sheet with parchment paper.
In a large, very clean bowl (any trace of grease will keep the whites from whipping to their fullest volume) whip the egg whites with an electric mixer on high speed until they hold soft peaks. Add the sugar, salt, and cinnamon and beat on low speed until just mixed. Stir in the nuts and toss until well coated. Transfer the nuts to the baking sheet and spread them out in a single layer.
Bake, stirring gently every 15 mins until the nuts are golden about 40 mins.
Remove the pan from the oven and set it on a wire rack to cool. After 5 mins remove the nuts with a metal spatula and spread them out on a cutting board to cool completely. The nuts can be stored at room temperature in an airtight container for upto 1 week.
