     Eggplant Curry

Ingredients
Paste - Peanut (1 cup)
Paste - Garlic cloves (4-5)
Paste - Ginger (1 inch piece)
Paste - Cilantro ( small bunch)
Paste - green chilly
Oil
1 small cut onion
1 tomato
Egg plants - cut into 4 pieces (6-8)
 
Jeera - 1 tbsp
Spices - Garam Masala
Spices - Salt
Spices - Cumin Dhania Powder
Spices - Turmeric
Spices - 0.5 tbsp sugar

Instructions
1. Make paste using Paste ingredients in a grinder 2. In a pan, add oil, Jeera,fry onions followed by tomato 3. Add spices 4. Add Egg plants and then after it has cooked for 4-5 mins, add the paste along with water
