     Acorn Squash Soup

Ingredients
1 T oil
1 onion, chopped
2-3 cloves garlic, minced
2 carrots, chopped
1 small potato, chopped
1 small acorn squash (or most of one)
2 cups water
2 tsp chicken oxo
1/4 tsp salt
 
1/4 tsp pepper
dash cinnamon
dash nutmeg
1 T sugar

Instructions
Sauté onion, garlic and carrot in oil. Add rest of ingredients and simmer for 20 minutes or until squash is very tender when pierced with a fork.
Blend soup until smooth. Return to pot and heat until very hot. This soup may also be refrigerated and heated later to be even more flavorful.
Serving Suggestions
Serve with a bit of cream poured on top of each bowl in an arch or swirl pattern on top of soup.
