Bake sweet potatoes until soft. (You can also
roast or mash them - whatever your preference.)
In 12 inch skillet, heat oil over medium heat and
cook bell pepper and onion about 5 minutes or
until tender.
Add remaining ingredients, except potatoes.
Bring to a boil over high heat.
Reduce heat and simmer for 5 minutes.
Spoon mixture over hot potato.
Enjoy!
