     Corn Fritters

1 Can Sweet Corn - drained
1 Cup Flour - sifted
1/2 tsp Baking Powder
Salt & Pepper to taste
1 Large Egg
2 Spring Onions - sliced
1 Jalepeno -seeded and chopped
2 Tbl Coriander - chopped
4 Tbl Milk
Olive Oil - drizzle a bit
Dipping Sauce
1 Cup Yoghurt
1/2 Lime - juiced
2 Tbl Coriander -chopped
1/2 Chili - seeded and chopped
Salt & Pepper

Drain Corn and set aside
Sift flour with baking powder, salt, and pepper. Add milk and egg, mix. Add a drizzle of Olive oil and mix until a smooth, cake like batter.
Add Corn, Spring Onion and Coriander and mix.
Pour enough oil in a pan to cover bottom thoroughly, heat until 350. Drop golf ball sized portions of mix and fry both sides until golden.
