     Cheddar Biscuits

Ingredients
1 3/4 Cup All Purpose Flour
1 Tbl - 2 tsp Baking Powder
2 1/2 tsp Sugar
1/4 tsp Salt
3 Tbl Vegetable Shortening - room temperature
4 Tbl Unsalted Butter - cold and cut into small squares
1 1/4 Cup Grated Cheddar Cheese
3/4 Cup Milk
 

Instructions
Preheat oven to 425 and cook on the 2nd highest rack.
Mix Flour, baking powder, sugar, and salt in a food processor and pulse. Add shortening. Pulse 4 - 5 x's Add Butter. Pulse 4 - 5 x's Add Cheese. Pulse 2 - 3 x's
Pour in Milk and pulse until it becomes a moist shaggy dough. Place in a bowl and kneed until it just comes together.
Drop dough on a lined baking sheet in 1/4 Cup portions, 2 inches apart. Bake for 15 - 20 minutes.
Serving Suggestions
With butter, Sausage Gravy, or with Chili.
