Add Vinegar, boiling water, sugar, salt, peppercorns and bay leaves to a saucepan and heat gently until sugar and salt has dissolved completely. Once dissolved, remove from heat and allow to cool down completely.
Slice cucumber finely.
Once the marinade has cooled down, add the sliced cucumber and place
in refrigerator for at least 30 minutes, ideally overnight.

Serve as condiment to BBQ meat, hot dogs, burgers etc.
