     Sausage peppers tomato pasta

Ingredients
5 or 6 or 8 LOL italian or garlic sausage cut into bite size pcs
4 mixed peppers cut in bite size pcs
4 onions chopped
2 pints cherry tomatoes
cloves from 2 heads garlic
2 T fennel
1 T dried oregano
1 tsp salt
fresh ground pepper
 
1 c red wine
2 T evo
1 pound of pasta I used penne
1 bag of spinach
1 c black olives
parmesan cheese
I sometimes add a little canned pasta sauce.

Instructions
Preheat oven to 350 convection roast. Combine sausage peppers onion garlic tomatoes fennel seeds oregano (I used a good Italian seasoning in place of fennel and oregano) salt pepper red wine and EVO. Mix well. Roast on sheet pan for hour. Mine was done in 40 min. Stir every 20 min or so.
Cook pasta in lg pot of salted water. Drain and add in spinach and olives stirring to wilt. keep a little pasta water to loosen this up. So then you are to add half of the sausage mixture and reserve rest of sausage mixture by freezing for a second meal. Each portion is to serve 4 with 1 pound of pata for each 4 servings. If you want to serve 8 people now use 2 pounds of pasta. I sometime add a little canned sauce depending on how much tomato I added to the cooked mixture. Usually don't have enough on hand LOL Top with Parm. This was really nice. Serve with salad great meal for a crowd or to have a little quick meal in the freezer.
