Heat oven to 365. Lightly coat bottom of baking dish with olive oil. Place salmon in dish.
Whisk together Dijon mustard, vinegar and dill, cover salmon with mustard mixture. Sprinkle with salt and pepper.
Bake 25 minutes, turn on the broiler and cook another 2-3 minutes to crisp the top
