2 LB OF SAUSAGE OR HAM
20 EGGS LIGHTLY BEATEN
6 C MILK
4 TEA DRY MUSTARD
2 TEA SALT
12 C FROZEN HASH BROWNS
4 C SHREDDED CHEESE
1 TEA BLACK PEPPER
1/2 C CHOPPED CILANTRO (OPT)
 
2 MED. TOMATOES, SEEDED & CHOPPED
1 C THIN-SLICED GREEN ONIONS

Instructions
PREHEAT OVEN TO 325. IN LARGE SKILLET, COOK SAUSAGE OR HAM OVER MED-HIGH HEAT, STIRRING FREQUENTLY UNTIL THOROUGHLY COOKED AND NO LONGER PINK. iN LARGE MIXING BOWL, COMBINE EGGS, MILK, MUSTARD AND SALT; STIR WELL. DISTRBUTE HALF THE HALF THE HASH BROWNS EVENLY IN TWO BUTTERED 9 x 13 x 2 BAKING DISHES. sPRINKLE WITH HALF THE PEPPER, HALF THE CHEESE, HALF THE MEAT AND HALF THE OPTIONAL INGREDIENTS. p-POUR HALF OF THE EGG MIXTURE EVENLY OVER EACH CASSEROLE. REPEAT LAYERING USING REMAINING POTATOES, PEPPER, CHEESE. MEAT AND OPT. INGREDIENTS. POUR REMAINING HALF OF THE EGG MIXTURE EVENLY OVER EACH CASSEROLE. BAKE UNCOVERED FOR 55 TO 60 MINUTES, OR UNTIL EGGS ARE SET. TENT WITH FOIL BEGINS TO BROWN TOO QUICKLY. NOTE- MAY BE ASSEMBLED AHEAD AND REFRIGERATED UP TO 12 HOURS BEFORE BAKING. MAKES 12 SERVINGS.
