     Black Bean and Quinoa Salad

Black Bean and Quinoa Salad

Ingredients
1 cup of finely chopped fresh cilantro
2 cloves of garlic
Fine zest of 1 lemon
3 tablespoons of fresh lemon juice
2 tablespoons of red wine vinegar
1 teaspoon of honey
1/2 cup of extra-virgin olive oil
1 teaspoon of ground cumin
1 teaspoon of crushed coriander seed;Ground coriander works, but fresh is much more flavorful
 
1/2 teaspoon of sea salt
1/4 teaspoon of freshly ground black pepper
1/2 cup of finely chopped fresh Italian parsley
3 cups of cooked quinoa
2 15oz cans of black beans
1 15oz can of chick peas
1 15oz can of sweet corn
1/2 medium red onion, finely chopped
1 cup of finely chopped bell pepper;I use red, orange and yellow to bring out the colors

Instructions
Lemon Cumin Vinaigrette- 2 cloves of garlic Fine zest of 1 lemon 3 tablespoons of fresh lemon juice 2 tablespoons of red wine vinegar 1 teaspoon of honey cup of extra-virgin olive oil 1 teaspoon of ground cumin 1 teaspoon of crushed coriander seed;Ground coriander works, but fresh is much more flavorful teaspoon of freshly ground black pepper Instructions- 1. Combine all ingredients in a bowl and stir vigorously until well mixed
Black Bean and Quinoa Salad- 3 cups of cooked quinoa 2- 15 ounce can of black beans 1- 15 ounce can of chick peas 1- 15 ounce can of sweet corn medium red onion, finely chopped 1 cup of finely chopped bell pepper;I use red, orange and yellow to bring out the colors 1 cup of finely chopped fresh cilantro cup of finely chopped fresh Italian parsley Instructions- 1. Combine all salad ingredients in a large bowl along with cup of the vinaigrette dressing. Allow the salad to sit for 15 minutes enabling flavors to develop. Taste & add more dressing if desired. Enjoy
