     Stuffed Poblano Peppers

4 large poblano peppers
2 fajita seasoned and cooked chicken breasts
1 can black beans, drained
1 can corn, drained
1 can Rotel tomatoes, drained
1/2 cup grated cheddar cheese (or jalepeno monterey jack cheese)

Chop chicken breasts and mix with beans, corn and rotel. Split peppers in half lengthwise, pull out and discard core and seeds. Spoon chicken and veggie mixture into it. Bake 350 17 minutes. Add cheese and melt on top to help hold all the yummy healthy food inside the pepper.
