2 large tomatoes, chopped, dill pickle slices optional
1 Cup shredded sharp cheddar
Instructions
To make the dressing, whisk all ingredients, plus 2 tsp. water, in a
small bowl. Set aside. (I like to prepare much earlier so the flavors
can marry a bit.)
Then heat oil in large skillet over medium-high heat. Add onion and
cook, stirring with a spatula, until it begins to soften, about 2
minutes. Add ground beef and salt and cook until metal is browned
and no longer pink, 6 to 7 minutes.
Add garlic and cook about 30 seconds more. Remove from heat.
Drain if necessary and return to pan.
Assemble lettuce, tomatoes, cheese and beef. Add pickles if you like.
Can add black olives and mexican cheese, and serve in a taco shell,
like a taco salad.
