Mince garlic and add to lemon juice--let it sit
for 10 minutes to soften flavor of garlic. Add
all ingredients except olive oil to a blender.
Blend for 30 seconds. To this mixture, slowly
add the olive oil. Brush a TBSP of dressing
over a split (1/2) romaine heart. Place on
grill for 1 minute, until there is a little char
all over lettuce. Pour a little dressing on top
Sprinkle with Parmesan cheese and crumbled
bacon.
Cut some slices of french bread. Put a little
butter on each slice, then on top of that, add
thin slices of cheddar. Put into oven until
cheese melts. Serve on side of salad. These
take the place of the croutons.
Can also grill some chicken breasts or shrimp to
put on top for a little protein.
