Add egg, yogurt, and half and half in a large bowl and mix to even
consistency. Next add flour, baking powder, salt, sugar, cinnamon,
and vanilla. Whisk until well combined and creamy.
Peel and core apple. Using a grater or food processor, grate apple
into thin shreds. Add shredded apple to mixture.
Heat skillet over medium heat, spray with oil. Using 1/4 C, drop
pancake batter onto skillet and cook until golden brown.
Dust with powdered sugar and serve.
