Preheat oven to 425 degrees. Spray rimmed baking sheet with
cooking oil. In a large bowl, toss together the sweet potato
slices, olive oil, and salt and pepper, so that both sides of
potatoes are well coated. Lay the slices out on a baking sheet
in a single layer. Place on the middle rack in the oven and bake
for 10 minutes. Flip them over and bake for another 8-10
minutes or until tender.
While the sweet potatoes bake, use a mixer to combine the
goat cheese, milk, rosemary and salt and pepper until smooth
and fluffy. Spoon approximately 1/2 tsp of goat cheese
mixture onto each round. Top with a few chopped pecans, and
craisins, then drizzle with honey. Serve warm or at room
temperature.
