     Rote Ruebansalat (Red Beet Salad)

Ingredients
8 to 10 medium beets
1 med onion, sliced
1 T sugar
1 T mild vinegar
salt and pepper to taste
 
Instructions
Cook beets until tender, drain skin and slice, add onions, sugar, and vinegar, salt and pepper. Marinate 1/2 hours.
